Getting up and going in the morning is a slow process for me. It requires a delicious cup of coffee with just the right amount of creamer to get my day off to a great start. I prefer to have my first cup of coffee before my boys are up and going, to give myself a little jolt and a head start.
Another treat that I have been enjoying lately is Hot Cocoa with my favorite flavors of Coffee Mate creamer added in. The coffee creamer really gives the cocoa a creamy texture while adding in a bit of different flavoring. There are so many flavors to choose from and they each give your coffee or cocoa a unique flavor boost.

With the Holiday season here, I tried to create a Hot Cocoa that I could serve to my guests. I wanted something that was fun and festive. While I was experimenting with different flavors, I came up with my favorite new cocoa.

I used French Vanilla and Peppermint Mocha and the combination is amazing! You can really make your cocoa or coffee into a delicious coffee shop quality drink at a fraction of the price with Coffee Mate creamers. I love that! I can purchase a bottle of creamer that will last me all week (or longer) for less than the price of a cup of coffee at my favorite shop. That gives me the flexibility to experiment with flavors and create that perfect cup to fit my needs.
French Vanilla Peppermint Cocoa
Ingredients:
Hot Cocoa Mix
Water
French Vanilla Creamer
Peppermint Mocha Creamer
Whip Cream
Crushed Candy Canes
Directions:
Warm Water and stir in Hot cocoa mix. Add French Vanilla and Peppermint Mocha creamer to desired taste. Top with whip cream and candy canes. Enjoy!
Not only can Coffee Mate creamers be used in coffee and cocoa but you can also use them in baking and cooking. My boys LOVE brownies. I created a very easy Peppermint Mocha Brownie with two layers of frosting. They were a huge hit! It looks very fancy but in fact was simple to make!
Peppermint Mocha Brownies

- Brownies:
- 1¼ cups flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 4 (1 -ounce) squares unsweetened chocolate
- 1 cup (2 sticks) unsalted butter
- 4 eggs
- 2 cups sugar
- 1 teaspoon vanilla
- Frosting:
- 2 cups powdered sugar
- ¼ cup (4 tablespoons) butter, softened
- 3 TBSP Peppermint Mocha Coffee Creamer
- red food coloring, 1 to 2 drops
- Chocolate Glaze:
- 6 ounces (about 1 cup) Mint Chocolate Chips
- 6 tablespoons butter
- Peppermint Topping:
- ½-1 cup crushed candy canes
- Preheat oven to 350º. Line a 9×13 inch pan with foil, making sure the foil extends over the edges by at least one inch. Lightly spray foil with nonstick cooking spray and set aside.
- Combine flour, baking powder, and salt. Set aside.
- Chop the baking squares and butter into chucks and place in a microwave-safe bowl. Microwave in 30 second intervals, stirring in between, until just melted and smooth. Set aside to cool, stirring occasionally.
- In a stand mixer or with electric beaters, beat eggs, sugar and vanilla for 2 minutes. While the mixer is running, slowly add the melted chocolate and beat to combine. With the mixer on low speed, gradually add flour mixture and mix just until combined. Pour into prepared 9×13 pan.
- Bake for 20-30 minutes or until a toothpick poked in the center comes out mostly clean. Don’t over bake!
- Peppermint frosting:
- Combine all frosting ingredients and beat until light and fluffy. Add more creamer a teaspoon at a time if needed. Spread evenly over brownies.
- Chocolate Glaze:
- Place chocolate chips and butter in a microwave-safe bowl. Microwave in 30 second intervals, stirring in between, until just melted and smooth. Set aside to cool for about 15 minutes, stirring occasionally, and then quickly spread on top of brownies.
- Sprinkle the crushed candy canes on top and return to the fridge to cool. When chocolate has hardened, use the edges of the foil to remove the entire sheet of brownies from the pan. Cut into squares and serve.

The best is creating my favorite coffee drink while saving a ton of money. Be sure to print out the coupon that is available and take it with you when you head to Walmart to stock up for the holidays.
