Easy Caprese Omelet

Is anyone else’s holiday craziness in full swing besides mine?! Don’t get me wrong; I love this time of the year but holy whirlwind! Between shopping, decorating, baking, Christmas parties and everything in between I don’t know if I am coming or going right now! I blame the chaos on the fact that I almost forgot to start planning for my very favorite holiday meal – Christmas brunch!
There is something about Christmas brunch that makes me feel a little nostalgic. It is one of the traditions from my childhood that I’ve practiced with my own family. We set the table with fun festive place settings on Christmas Eve. Sometime after the presents are opened on Christmas morning and the house is a complete disaster we sit in our pj’s together and talk and laugh over brunch. So many of my best memories have been made over the years during this time.
This year I am creating a delicious and nutritious caprese omelet for our holiday brunch. I figured after the amount of cookies and sweets that are consumed during the season I owe my family something that is good for them but also something I know they are going to love!
Packed with yummy tomatoes, basil, cheese and made with wholesome milk which is naturally nutrient-rich, I feel good serving it to my family and knowing it will help us start our Christmas morning off right
How to Make a Caprese Omelet
Ingredients
- 2 teaspoons – olive oil
- 1 – large egg
- 2 – large egg whites
- 3 tablespoons – fat free milk
- 1 – beefsteak tomato, sliced
- 1/4 cup – lowfat shredded mozzarella cheese
- 1 tablespoon – fresh basil, chopped
- Pair each serving with:
- 8-ounce glass of milk
Directions
Heat olive oil in a large nonstick pan over medium heat. Beat eggs and 3 tablespoons milk together in a small bowl until well mixed.
Pour egg mixture into heated pan, swirling the pan until eggs cover the bottom. Allow the eggs to set and no visible liquid remains, about 2 -3 minutes.
After the eggs have set, arrange the tomatoes, cheese and basil on one side of the eggs. Using a spatula, carefully fold omelet in half, bringing the egg portion over the filling. Remove omelet from pan and serve with remaining 8-ounce glass of milk and enjoy
