The holidays can be very chaotic for me and it is often tempting to run through the drive-thru or pop something frozen from a bag into the microwave. I love giving my family a hot hearty meal but the time it takes to prepare and clean up is sometimes just more than I have the energy for. My solution is one-skillet recipes, particularly this One Skillet Chicken Parmesan Pasta. This dish is easy, on the table in less than 30 minutes, and uses just one pan instead of 3 plus a strainer-less dishes to wash is always a plus! One Skillet Chicken Parmesan Pasta
You will need:
1/2 lb. boneless skinless chicken breast
1-15 oz. can Hunts Petite Diced Tomatoes
1 cup mozzarella cheese
1/2 cup shredded cheddar
1/2 cup heavy cream
1 cup water
2 cups chicken broth
1 tsp. crushed garlic
1 tsp. ground black pepper
fresh Basil and Rosemary
Directions:
Chop chicken into small bite sized pieces, if your chicken is slightly frozen it is really easy to cut up.
Drizzle large saucepan with olive oil and heat over medium-high heat.
Add chicken and brown until thoroughly cooked through and golden on the outside, add garlic and cook for 2 minutes, set aside chicken for now.
Place pasta, water, chicken broth, and diced tomatoes, simmer for 20 minutes, stirring frequently until pasta is al dente.
Stir heavy cream and black pepper in and cook an additional 5 minutes.
Add prepared chicken then top with the shredded cheddar and mozzarella cheese, place a lid on top for a few minutes to melt the cheese well.
