I love to bake for friends and family as soon as the holidays begin. There is nothing like the smell of ginger, cinnamon, and vanilla filling the air. I also like to swap out ingredients to make my baked goods a little healthier and I recently discovered that Earth Balance Buttery Spread makes a great sneaky swap.
The texture, flavor, and density are the same as my original recipe but are 100% plant-based, gluten-free, non-dairy, and an excellent source of Ala Omega 3. Give this recipe a try on your dessert table this holiday season and see if your family doesn’t ask for it time and again.
Gingerbread Pound Cake
Ingredients:
1 cup Earth®Balance Buttery spread or sticks
4 large eggs
1/4 cup molasses
1 tsp. vanilla extract
3 T. sour cream
1 3/4 cups all-purpose flour
1 1/4 cups packed brown sugar
1/4 tsp. baking soda
1 tsp. cinnamon
1 tsp. ground ginger
1/2 tsp.allspice
Icing:
3/4 cup powdered sugar
1 T. almond milk
Directions:
Preheat oven to 350° and butter a 8 1/2″ by 4 1/2″ nonstick loaf pan well with Earth Balance, set aside.
Stir together flour, baking soda, and spices in a large bowl until well mixed.
In the bowl of your stand or handmixer combine brown sugar and Earth Balance® Buttery Spread until smooth and mixed well.
Add in sour cream and molasses on medium speed until just combined.
Slowly incorporate dry ingredients until mixed.
Pour batter into the prepared loaf pan, and tap on counter to evenly settle mixture.
Bake for 1 hour and 30 minutes or until a toothpick, inserted in the center comes out clean.
Allow to cool completely then flip out onto a clean towel, place on serving plate.
To make icing combine almond milk a teaspoon at a time with the powdered sugar until it is a little more liquid than a toothpaste consistency, pour over pound cake.
This Gingerbread Pound Cake is amazing with a glass of almond milk or a hot cup of coffee any time of day, even breakfast, I promise not to tell.
